This is a wonderful and easy recipe, and a magical way to serve eggs at your next brunch!
You’ll want to whip those egg whites just as you do with meringue. Much easier than you think, so get to it!
① Preheat your oven to 450 and line a sturdy cookie sheet with parchment paper.
② Separate the eggs, putting the whites in a large mixing bowl and the yolks in separate little cups.
③ Whip the whites at high speed until stiff peaks form, about 2-3 minutes. Don’t over-beat!
④ Divide the whites into 4 little cloud shapes on the baking sheet and make a little scoop in the center of each cloud. (don’t put the yolks in yet!)
⑤ Bake for 3 minutes, slide the cookie sheet out and gently slip a yolk into each well. Cook for an additional 3 minutes.
⑥ Remove your Eggs in A Cloud gently with a spatula and serve!
